What to Do With All of Those Apples!
Many families enjoy the fall season, and celebrate with one or more trips to the local apple picking farms. In our family, we usually go once together, and then again with the children’s school field trips – so we end up with several bags of delicious apples to enjoy. However, what do you do with all of those apples when you’re tired of eating them?
Here are a number of apple-based recipes you might want to try to add interest and flavor to your apples – and make sure that none go to waste! (recipes adapted from http://www.eatingwell.com)
CHEESY APPLE BREAKFAST
1 whole-wheat English muffin, toasted
2 teaspoons jam or jelly
4 apple slices
2 slices reduced-fat Cheddar cheese
Spread English muffin with jam or jelly. Place apple slices and cheese on top. Toast in a toaster oven or under the broiler until the cheese melts, and enjoy!
SWEET GRILLED APPLES (Snack or Dessert, pictured above)
1 large or 2 smaller apples, peeled and sliced into 1/2-inch-thick rounds- like sliced pineapple!
2 teaspoons canola oil
1 teaspoon confectioners’ sugar
1 ounce sharp Cheddar cheese
2 tablespoons chopped pecans, toasted
4 teaspoons honey
Preheat grill or grill pan to medium heat. Toss apple slices with oil and sugar in a large bowl. Grill the apple slices until just tender and lightly marked, turning once, about 6 minutes total. Shave cheese into thin strips with a vegetable peeler. Top the apple slices with a sprinkling of cheese and nuts and drizzle with honey, serve and enjoy!
HEALTHIER WALDORF SALAD
1/4 cup nonfat plain yogurt
3 tablespoons reduced-fat mayonnaise
1/2 teaspoon curry powder
1/8 teaspoon salt
Pinch of cayenne pepper, or to taste
1 orange
2 tart-sweet red apples, diced (about 2 cups)
1 cup chopped celery
1/3 cup golden raisins
1/3 cup toasted walnut pieces, coarsely chopped
1. Whisk yogurt, mayonnaise, curry powder, salt and cayenne in a medium bowl. Grate 2 teaspoons zest from the orange and add to the dressing.
2. Using a sharp knife, cut off the peel and white pith from the orange. To make attractive segments, hold the orange over the bowl (to catch the juice) and slice between each segment and its surrounding membranes. Add apples, celery, raisins and walnuts; toss to combine
