My local grocery store puts boneless pork chops on a buy one package – get one package free sale regularly. I’m not a huge fan of pork chops because I don’t know what to do with them to be honest, but after experimenting with my last package of chops, I came up with a tasty recipe.

  • 3 or 4 Boneless Pork Chops
  • 1 Cup Raisin Bran cereal
  • 1 cup chopped Apple
  • 1 Cup chopped Celery
  • 3 tablespoons prepared Mustard
  • Salt
  • Pepper
  • vegetable or olive oil
  • flour
  • 1 cup of water
  • toothpicks

What You’ll Do:

Brown the pork chops in a frying pan on very low heat, in a small amount of oil. Cook for just a minute or two on both sides. The center will not be cooked through.

While they are cooking, combine the raisin bran, chopped apple and celery in a food processor and spin until finely chopped.

When pork chops have browned, remove from pan (save drippings) and slice lengthwise down the middle so each chop becomes two separate pieces about 1/2″ thick. If they are still thicker than this after slicing, pound them flat.

On each flattened chop, spread a thin layer of yellow mustard, sprinkle salt and pepper to taste, and spoon a layer of the cereal, celery and apple mixture on top. Roll the pork like a jelly roll, and hold together with toothpicks. Dip each roll in flour to give them a light coating.

Add one cup of hot water to the reserved pan drippings and pour into a dutch oven or a crockpot. Add the pork rolls and bake at 350 degrees for about 1 hour or until cooked through and tender.
